Rasta Pasta

Ingredients:

  • 1 lb. penne pasta
  • 3 boneless skinless chicken breasts
  • 2 tbsp. jerk seasoning, divided
  • Kosher salt
  • 2 tbsp. extra-virgin olive oil
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1/3 c. sliced green onions, plus more for garnish
  • 3 cloves garlic, minced
  • 1/4 c. low-sodium chicken broth
  • 1/2 c. heavy cream
  • 1/2 c. freshly grated Parmesan, plus more for garnish

Instructions:

  • Cook the pasta according to the package instructions to al dente. Drain and keep aside.
  • Season the chicken breasts with 1 tablespoon jerk seasoning and salt. Heat 1 tablespoon oil in a large skillet over medium heat. Cook the chicken until golden at least 8 minutes per side. Remove from the pan and keep aside to rest.
  • Add the remaining oil and cook the peppers till tender at least 4 to 5 minutes. Add the chopped green onions and garlic and cook till fragrant for 1 minute. Season with the remaining jerk seasoning.
  • Add the chicken stock and heavy cream. Allow simmering till thick for 5 minutes. Slice the chicken. Add the parmesan and stir until melted, Add the pasta and chicken and toss till combined well.
  • Garnish with green onions and a little more parmesan and serve hot.

Tuscan Butter Gnocchi

Ingredients:

  • 4 tbsp. butter
  • 3 cloves garlic, minced
  • 2 c. halved cherry tomatoes
  • 1 tsp. dreid oregano
  • Kosher salt
  • Freshly ground black pepper
  • Pinch red pepper flakes
  • 4 c. baby spinach
  • 1 c. low-sodium chicken broth
  • 1 c. heavy cream
  • 1/2 c. freshly grated Parmesan
  • 1/4 c. freshly chopped herbs (such as basil and parsley), plus more for garnish
  • 2 (17.5-oz.) packages gnocchi
  • 1 c. shredded mozzarella
  • Lemon wedges, for serving

Instructions:

  • Preheat the oven to 350°. Melt butter over medium heat in a large skillet. Add garlic and cook until fragrant for 1 minute.
  • Add cherry tomatoes and season with oregano, salt, pepper, and a pinch of red pepper flakes. Cook until the tomatoes begin to burst, add spinach and cook until it starts to wilt.
  • Stir in the broth, heavy cream, parmesan, and herbs and bring to a gentle simmer. Reduce the heat to low and simmer until sauce is slightly reduced, about 3 minutes.
  • Add the gnocchi and toss to coat the sauce. Pour the gnocchi into a 9”-x-13” baking pan and top with mozzarella. Bake until the gnocchi is cooked through and cheese melts approximately 30 minutes.
  • Garnish with some herbs and squeeze a lemon on top before serving.
