Here are some easy and affordable meat dishes:

Garlicky Lemon Baked Tilapia
Ingredients:
- 4 tilapia
- Kosher salt
- Freshly ground black pepper
- 5 tbsp. butter, melted
- 2 cloves garlic, minced
- 1/4 tsp. red pepper flakes
- Juice and zest from 1/2 a lemon
- 1 lemon, sliced into rounds
- Chopped parsley for garnish
Instructions:
- Preheat the oven to 400°. Season the tilapia with salt and pepper and place it on a small baking sheet.
- In a bowl, mix together the butter, garlic, red pepper flakes, lemon juice, and lemon zest. Pour this mix over the tilapia.
- Place lemon slices on top and around the tilapia.
- Bake the tilapia for 10 to 12 minutes or until the fish is fork-tender.

Creamed Spinach Chicken
Ingredients:
- 2 tbsp. extra-virgin olive oil, divided
- 4 boneless skinless chicken breasts
- 2 tsp. paprika
- Kosher salt
- Freshly ground black pepper
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 10 oz. baby spinach
- 1 c. heavy cream
- 3/4 c. low-sodium chicken broth
- 1 c. shredded mozzarella
- 1/2 c. freshly grated parmesan
- Crusty bread, for serving (optional)
Instructions:
- Over medium heat, in a large skillet heat 1 tablespoon oil.
- Season the chicken with paprika, salt, and pepper. Leave aside for 5 minutes.
- Place the chicken in the skillet and cook until golden, a minimum of 8 minutes per side. Transfer the cooked chicken to a plate.
- Heat the remaining tablespoon oil and add onion and cook until soft for 5 minutes. Add garlic and cook for a minute more. Add the spinach in batches, until wilted.
- Pour over heavy cream and chicken broth and simmer for 3 minutes. Add the mozzarella and Parmesan. Stir until melted, return the seared chicken to the skillet and allow to simmer for 5 minutes.
- Serve creamed spinach spooned over chicken with bread.
