Garlicky Lemon Baked Tilapia

Ingredients:

  • 4 tilapia
  • Kosher salt
  • Freshly ground black pepper
  • 5 tbsp. butter, melted
  • 2 cloves garlic, minced
  • 1/4 tsp. red pepper flakes
  • Juice and zest from 1/2 a lemon
  • 1 lemon, sliced into rounds
  • Chopped parsley for garnish

Instructions:

  • Preheat the oven to 400°. Season the tilapia with salt and pepper and place it on a small baking sheet.
  • In a bowl, mix together the butter, garlic, red pepper flakes, lemon juice, and lemon zest. Pour this mix over the tilapia.
  • Place lemon slices on top and around the tilapia.
  • Bake the tilapia for 10 to 12 minutes or until the fish is fork-tender.

Creamed Spinach Chicken

Ingredients:

  • 2 tbsp. extra-virgin olive oil, divided
  • 4 boneless skinless chicken breasts
  • 2 tsp. paprika
  • Kosher salt
  • Freshly ground black pepper
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 10 oz. baby spinach
  • 1 c. heavy cream
  • 3/4 c. low-sodium chicken broth
  • 1 c. shredded mozzarella
  • 1/2 c. freshly grated parmesan
  • Crusty bread, for serving (optional)

Instructions:

  • Over medium heat, in a large skillet heat 1 tablespoon oil.
  • Season the chicken with paprika, salt, and pepper. Leave aside for 5 minutes.
  • Place the chicken in the skillet and cook until golden, a minimum of 8 minutes per side. Transfer the cooked chicken to a plate.
  • Heat the remaining tablespoon oil and add onion and cook until soft for 5 minutes. Add garlic and cook for a minute more. Add the spinach in batches, until wilted.
  • Pour over heavy cream and chicken broth and simmer for 3 minutes. Add the mozzarella and Parmesan. Stir until melted, return the seared chicken to the skillet and allow to simmer for 5 minutes.
  • Serve creamed spinach spooned over chicken with bread.

These easy and affordable meat dishes are absolutely delicious and don’t take much time to prepare too.
